After being cut or grounded into granules and/or slices, the coconut pieces are dried to remove maximum moisture from them.
In majority of the dessicated coconut brands, the final water content is below 5 percent (average 3 percent).
This makes dessicated coconut an ideal culinary ingredient that can be stored for several years without altering its taste.
