A little larger than navy beans, slightly oval, and white. They are used as casseroles, baked beans and soup. Any recipe that uses other white beans like navy beans or cannellini beans can be made with Great Northern Beans instead. Though these beans alone may not have considerable taste, they do absorb flavor extremely well. They will easily take on the flavor profiles of spices or herbs used in cooking.

Bean and Apple Casserole
1 c (250ml) Great Northern or butter beans, soaked
2 Firm eating apples, peeled, cored and quartered
1/2 tb Brown sugar
1/2 ts Cinnamon
1 tb Red wine vinegar
Salt
Cook the beans in unsalted water until tender, about 1 to 1 1/2 hours. Drain, reserving the liquid. Preheat the oven to 350 degrees F (180C). Stir the apples, sugar, cinnamon, vinegar, and salt into the beans. Transfer to an ovenproof dish and just cover with some of the reserved liquid. Cover with a lid or foil and bake for 35-40 minutes.
